If you are serving an API interface to the public or another team in your company, then it will ideally expose as little as possible. Once fields are exposed, then you have to start supporting actual or potential use of these fields.
This then can make development slower, because collaborating between teams is much slower than within a team.
Don’t serve yourself into a corner. Have different API endpoints, some that are minimal, slow-changing and reliable, and some that are more granular, detailed, and there is an expectation that they may change in future.
